- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, blend butter, ½ cup powdered sugar, vanilla, salt, and flour until a smooth dough forms.
- Fold in chopped pecans.
- With damp hands, roll dough into 36 small balls.
- Place on baking sheet and bake for 12 minutes, until just set (not browned).
- Let cookies cool completely.
- Roll cooled cookies in the remaining 1 cup powdered sugar to coat.
