For the pre-dough:

Warm water: 100 gr
Fresh brewer’s yeast: 20 gr
For the dough:

00 flour: 750 g
Whole milk: 240 ml
Eggs: 2
Egg yolks: 2
Sugar: 40 g
Soft butter: 50 g
Salt: 20 g
To decorate:

Egg whites: 2
Water: 1 tablespoon
