Instructions:

1. **Prepare the vegetables:**

– Peel and dice the potatoes.

– Slice the carrot into rounds.

– Chop the bell pepper, cabbage, celery, and onion.

2. **Cooking the soup:**
– In a large pot, add about 6 cups of water and bring it to a boil.
– Add the chopped onions and cook until they are translucent.
– Add the potatoes, carrots, bell pepper, cabbage, and celery to the pot.
– Season with salt and dried basil.
– Reduce the heat and let it simmer for about 20-30 minutes, or until the vegetables are tender.
3. **Serving:**
– Once the vegetables are cooked, adjust the
 seasoning if needed.
– Ladle the soup into bowls and garnish with fresh parsley.
– Serve hot.
