Meatloaf
🧾 Ingredients (Serves 6–8)
For the Meatloaf:

2 lbs ground beef (or a mix of beef and pork for extra richness)

1 cup breadcrumbs (or gluten-free breadcrumbs if needed)

½ cup milk

2 large eggs, lightly beaten

1 medium onion, finely chopped

2 cups mushrooms, finely chopped

3 garlic cloves, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper, to taste

4 slices Swiss cheese, divided (reserve 2 slices for stuffing)
- 8 slices bacon
Optional Glaze:

¼ cup ketchup

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce
