Always make at least 4 of these loaves as I can eat them for breakfast in the morning too!
Directions
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
4. Gradually mix in the dry ingredients alternating with apple cider, starting and ending with the flour mixture.
5. Fold in the chopped apples.
6. Pour the batter into the prepared loaf pan.
7. In a small bowl, mix together all ingredients for the cinnamon topping until crumbly. Sprinkle evenly over the batter.
8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Variations & Tips
If you’d like to mix things up, try adding a handful of walnuts or pecans to the batter for a delightful crunch. For those who enjoy a bit more spice, you can increase the amount of ground cinnamon or add a pinch of ground nutmeg to both the batter and the topping. For a less sweet version, reduce the granulated sugar to 3/4 cup.
