Directions

1. Place the peeled and cut carrots into the slow cooker.
2. In a small bowl, whisk together the honey, melted butter, apple cider vinegar, salt, pepper, thyme, and cinnamon.
3. Pour the honey mixture over the carrots and toss to coat them evenly.
4. Cover the slow cooker and cook on low for 4-5 hours, or until the carrots are tender.
5. Stir the carrots once halfway through cooking to ensure they are evenly coated with the glaze.
6. Once cooked, transfer the carrots to a serving dish and garnish with fresh parsley if desired.

Variations & Tips

For a different flavor profile, try adding a teaspoon of grated ginger to the glaze for a bit of warmth and spice. You can also substitute maple syrup for honey if you prefer a different kind of sweetness. For a touch of heat, a pinch of red pepper flakes can be added to the glaze. If you’re looking to make this dish vegan, replace the butter with a plant-based alternative. Experiment with different herbs like rosemary or sage to find your preferred flavor combination.
