Just because you’re eating a low-carb diet, you can’t be expected to give up on the entire sandwich concept. Sandwiches are easy, convenient and, let’s face it, so tasty that they’re hard to quit. The recipe below makes the perfect low-carb version using crisp slices of cucumber as the “bread.”
This “sandwich” makes an easy lunch or a satisfying snack. You can use any herbs or seasonings you like in the cream cheese mixture. And, of course, you can change up the deli meat. Another combination I love is a horseradish cream cheese with slices of deli-sliced roast beef.
