Why I Don’t Fry Fish
Traditionally, frying fish is the go-to method for many. While frying can give the fish a crispy texture and a beautiful golden-brown color, it often involves heavy oils and can sometimes overpower the delicate flavors of the fish. I’ve always preferred a lighter, healthier way of cooking fish that allows its natural taste to shine through. That’s when I discovered the simple method of grilling mackerel. It’s a method that not only enhances the fish’s natural flavors but also keeps it light and healthy. No frying, no greasy mess – just pure, delicious mackerel!

The Secret to Perfect Mackerel
The trick to making mackerel truly delicious lies in a few simple ingredients and techniques. Here’s a step-by-step guide to cooking the perfect mackerel:

Ingredients:
2 whole mackerel, cleaned and gutted (you can ask your fishmonger to do this for you)
2 tablespoons of olive oil
2 cloves of garlic, minced
1 lemon (zest and juice)
Fresh herbs (like thyme or parsley)
Salt and pepper to taste
A pinch of smoked paprika (optional for a smoky flavor)
A handful of fresh greens for garnish (optional)
Instructions:
Prepare the Mackerel: If you haven’t done so already, clean and gut the mackerel. Then, give the fish a good rinse and pat it dry with a paper towel. The drier the fish, the better it will cook.
Make the Marinade: In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, and smoked paprika (if you’re using it). Stir the mixture well to combine.
Marinate the Mackerel: Rub the marinade generously all over the mackerel, ensuring it gets inside the cavity as well. You can marinate the fish for about 15-30 minutes, allowing the flavors to meld and infuse the fish.
Grill the Mackerel: Preheat your grill or a grill pan over medium-high heat. Once hot, place the mackerel on the grill. Grill for about 4-5 minutes on each side, or until the fish has nice grill marks and the flesh is opaque and easily flakes when you press it with a fork. The skin should be crispy, but the meat inside remains tender and juicy.
Serve: Once the mackerel is perfectly grilled, place it on a serving plate. Garnish with fresh herbs, a few slices of lemon, and some greens if desired. Serve with a side of steamed vegetables, rice, or a fresh salad to complete your meal.
