Roasted Beet & Goat Cheese Log

A vibrant, elegant appetizer featuring creamy  goat cheese, earthy roasted beets, and crunchy pistachios—perfect for entertaining or a gourmet

 snack!

Ingredients

For the Beet Log:

  • 2 large beets, roasted and peeled

  • 6 oz goat cheese, softened

  • 1/4 cup chopped pistachios

  • 1 tbsp honey

  • 1 tbsp fresh parsley, chopped

  • 1/2 tsp salt

  • 1/4 tsp black pepper

For Garnish & Serving:

  • 1/4 cup whole or crushed pistachios

  • Fresh parsley, finely chopped

  • Crackers or toasted bread
