This delightful Vanilla Lavender Blackberry Jam combines the sweet burst of blackberries with delicate lavender for a unique treat!
Ingredients:
– 1 cup dried lavender flowers
– 2 cups water
– 9 cups blackberries
– 6 cups white granulated sugar
– 2 tsp vanilla extract
Directions:
1. Start by steeping the dried lavender flowers in 2 cups of water. Bring it to a gentle simmer and reduce the liquid until you have about 1/2 cup. Then, take it off the heat and let it cool.
2. In a large pot, toss in your fresh blackberries and heat them over medium. Cook them until they burst and transform into a lovely, jammy mash.
3. Once the blackberries are ready, add in the sugar and the reserved lavender water. Stir everything together, then bring it to a boil, ensuring that all that sugar dissolves beautifully. Let it cook rapidly, stirring often, until it reaches the gelling point. Keep an eye on it, reducing the heat as it thickens to your preferred consistency.
4. When it’s just right, stir in the vanilla extract for that extra hint of warmth and flavor.
5. Before canning your jam, prepare your equipment. Make sure you have clean mason jars, lids, and rings all set to go.
6. Carefully pour the hot jam into the hot mason jars, leaving about 1/4 inch of headspace at the top.
7. Wipe the rims of the jars clean, then place the lids and rings on securely.
8. To seal everything perfectly, process the jars in a boiling water bath for 15 minutes.
