Processed foods such as sausages, bacon, ham… are always delicious and convenient for busy family breakfasts. However, these foods contain nitrite – the main role of which is to create pink color for meat, prolong shelf life and make them softer.

Nitrite itself is not a carcinogen, but when it enters the body, it combines with protein-degrading substances in the stomach, forming a carcinogen called nitrosamine. In October 2015, the WHO classified processed meat as a “group 1 carcinogen”, with a level of danger equivalent to smoking, and is considered a possible cause of bowel cancer.
