Method:
Prep and season:
Preheat your oven to 400°F (200°C). In a large bowl, combine chicken breasts, adobo seasoning, chili powder, garlic powder, paprika, brown sugar, olive oil, and balsamic vinegar. Toss well until the chicken is fully coated with the seasoning mix.
Bake with broth:
Place the seasoned chicken breasts in a deep baking dish. Pour the chicken broth around the chicken (not over it). Bake for 40 minutes, basting every 10–12 minutes with the pan juices to keep it juicy.
Finish with a broil:
During the last 4 minutes, switch your oven to broil to add a nice golden color to the chicken.
Serve:
Remove from the oven, baste one last time, garnish with fresh parsley if desired, and serve immediately.
